Four Vegan Greek Dishes

1. Greek Garlic Stuffed Zucchini


  • 6 small garden fresh zucchini
  • ⅓ cup extra virgin olive oil
  • 3 cloves thinly sliced garlic
  • 3 medium fresh coarsely chopped tomatoes
  • ¼ cup coarsely chopped parsley
  • sea salt (to taste)
  • red pepper flakes (to taste)


Wash, but do not peel the zucchini. Then make a full lengthwise slit and place the sliced garlic inside the pocket. Put the tomatoes and zucchini in a casserole dish and drizzle with the extra virgin olive oil, sprinkle with salt, red pepper flakes, and parsley

Bake in a 350 degree preheated oven for about an hour and a half, or until the zucchini is tender. This is a warm and hearty vegan Greek dish.

2. Greek Lentil Soup

  • 1½ pounds dried lentils
    2 large, chopped onions
  • 2 tsp extra virgin olive oil
  • 4 coarsely chopped garlic cloves
  • 2 bay leaves
    3 tbsps tomato paste
  • sea salt (to taste)
  • red chili flakes (to taste)


Soak the lentils beforehand, for an easier cooking process. Sauté the onions in olive oil until translucent. In a large pot, cover the lentils in water and boil. Then drain the liquid.

Add about five cups of fresh water to the lentils, and all the other ingredients, and simmer until done. (Generally, this takes about an hour.) Remove the bay leaves and serve the soup with a fresh drizzle of extra virgin olive oil. This is comfort food at its finest!

3. Greek Salad

  • 1 medium red onion
  • 1 cucumber
  • 1 bell pepper
  • 5 medium tomatoes
  • 20 black olives
  • 2 tbsp oregano
  • extra virgin olive oil
  • fresh lemon juice
  • sea salt (to taste)
  • pepper (to taste)


Slice the vegetables in large pieces. Toss them with extra virgin olive oil, a splash of fresh lemon juice, and the seasonings. To keep it vegan: you can add chunks of tofu to replace the more often used feta ingredient. This Greek salad is fresh, healthy, delicious, great for summer, and purely vegan.


4. Fava Bean Dip

  • 2 ½ cups cooked and peeled fava beans
  • 2 shallots, coarsely chopped
  • 6 sprigs thyme leaves
  • 2 tbsp fresh lemon juice
  • 2 tbsp lemon zest
  • sea salt (to taste)
  • ½ cup extra virgin olive oil


Place all the ingredients (except the olive oil) in a large bowl and gently combine. Then, put the ingredients, along with the olive oil, into a food processor and pulse until smooth. Place the dip in a serving bowl and garnish with a few extra sprigs of thyme. Enjoy!
