4 Vegan Greek Recipes

Jun 17, 2019

For the health conscious eater who doesn’t want to give up flavor, converting recipes to vegan can sometimes present a challenge. Some people choose a fully vegan lifestyle, while others just want to incorporate an occasional vegan meal into their dining experience. Either way, the flavor is crucial.

Quality Greek food always consists of fresh, flavorful, and healthy ingredients, but for the vegans, the likes of lamb, feta, and other traditional items simply don’t work for their lifestyle. However, there’s no cause for concern.

For those searching for authentic, tasty, and traditional Greek food — created specifically with vegan eaters in mind — we’ve got a few recipes for awesome vegan Greek food that will suit your dietary needs and keep even your non-vegan guests asking for more.

Not only are these Greek vegan recipes delicious, but they are also easy to make.

Four Vegan Greek Dishes

1. Greek Garlic Stuffed Zucchini

Ingredients:

  • 6 small garden fresh zucchini
  • ⅓ cup extra virgin olive oil
  • 3 cloves thinly sliced garlic
  • 3 medium fresh coarsely chopped tomatoes
  • ¼ cup coarsely chopped parsley
  • sea salt (to taste)
  • red pepper flakes (to taste)

Directions:

Wash, but do not peel the zucchini. Then make a full lengthwise slit and place the sliced garlic inside the pocket. Put the tomatoes and zucchini in a casserole dish and drizzle with the extra virgin olive oil, sprinkle with salt, red pepper flakes, and parsley

Bake in a 350 degree preheated oven for about an hour and a half, or until the zucchini is tender. This is a warm and hearty vegan Greek dish.

2. Greek Lentil Soup

Ingredients:

  • 1½ pounds dried lentils
    2 large, chopped onions
  • 2 tsp extra virgin olive oil
  • 4 coarsely chopped garlic cloves
  • 2 bay leaves
    3 tbsps tomato paste
  • sea salt (to taste)
  • red chili flakes (to taste)

Directions:

Soak the lentils beforehand, for an easier cooking process. Sauté the onions in olive oil until translucent. In a large pot, cover the lentils in water and boil. Then drain the liquid.

Add about five cups of fresh water to the lentils, and all the other ingredients, and simmer until done. (Generally, this takes about an hour.) Remove the bay leaves and serve the soup with a fresh drizzle of extra virgin olive oil. This is comfort food at its finest!
