Strawberry Muffins as a Perfect Idea for Dessert
Feb 19, 2021
A fantastic dessert is an ideal way to elevate any meal. But even the most experienced chefs can sometimes forget what makes the perfect dessert.
Easy strawberry muffins are a balanced and versatile dessert that everyone can appreciate if made right. They’re also super convenient—you can make them ahead and store them, and you won’t need to worry about portioning them out later like you would with a cake.
But while sometimes muffins alone can be a nice quick treat, they truly come to life with the right toppings or frosting. In this post, we’ll show you what can be accomplished with one of our delicious strawberry muffins, a few ingredients, and a little creativity.
Lemon-Berry Shortcake Muffin Recipe
In this first recipe, you can use Lemon & Vine strawberry muffins that will create a delectable and fresh sensation. Once you try this, you’ll never think of shortcakes the same way again.
Here’s what you’ll need:
- 2 tbsp grated lemon peel
- ¾ cup sugar
- ½ cup blueberry jam
- 5 cups quartered strawberries
- 5 tbsp lemon juice, divided
- 4 ½ cups blueberries
- 2 ⅓ cup whipping cream
- Lemon and Vine strawberry muffins
Here’s a hint! When you’re grating lemon peel for this recipe (and for most others), you’re best off using a zester, and don’t grate past the yellow surface. The white endocarp below is bitter and will transfer that bitterness into your filling.
To start, get a box of Lemon and Vine strawberry muffins out of the freezer and let them thaw at room temperature. Next, you’ll make lemon sugar, which you’ll use in the following steps. All you’ll need to do for that is combine the sugar with grated lemon peel in a mixing bowl and thoroughly mix them together.
Then, get a large skillet and melt the blueberry jam in it before adding 3 tablespoons of lemon sugar and 2 tablespoons of lemon juice. Once everything is melted, set it aside to cool and move on to your whipping cream.
Start by whipping one cup of cream with a hand mixer and slowly add two tablespoons of lemon sugar and a tablespoon of lemon juice. Continue mixing until the cream is whipped, cover it, and place it in the refrigerator to chill for 30 minutes to an hour.
Right before you are ready to assemble your dessert, warm the muffins in the microwave for approximately 30 seconds.
Split the muffins in half and put a generous amount of berries and blueberry filling in each one. Top the berries with whipped cream and then lightly place the other half of the muffin on top of the cream. Top with more whipped cream and serve immediately.
Our strawberry muffins are the perfect canvas for this delectable filling, and they’re much more convenient than having to whip up a shortcake dough as well. And, they’re frozen fresh, so when you warm them in your oven, no one will suspect they’re not homemade.
Strawberries and Cream Greek Dessert Muffin Recipe
The recipe above is ideal if you want to impress your friends at a weekly brunch or make something special for a weekly dinner. But if you don’t have the time or the inclination to put in too much effort, you can opt for this next one instead.
All you need is:
- 3 cups of fresh strawberries
- 1 cup of cottage cheese
- 1 cup sour cream
- ½ cup powdered sugar
- ⅓ cup granulated sugar
First, slice the strawberries in half or quarter them, whichever you prefer, and stir in the granulated sugar making sure you coat them all. Set those aside to marinate in the sugar and start working on your cream.
Use a blender to whip up the cottage cheese until it’s completely smooth. Then, stir in sour cream and powdered sugar. Mix gently until all the ingredients are thoroughly combined, and you’re ready to assemble.
This recipe makes enough cream for about 12 of our Lemon and Vine strawberry muffins, so you can use half the ingredients if you only want to use one box. All you have to do is top the muffins with a generous amount of sweet cream and top them with the sweet strawberries.
Ideally, you’d give the cream and strawberries some time to chill in the fridge, use them to top warm muffins, and enjoy immediately.
What Makes a Perfect Dessert?
Making easy strawberry muffins is simple enough. And you can definitely fall back on a handful of dessert recipes for most occasions. But you can also make your own desserts if you learn what the components are of a good dessert and how to combine them in the right ways.
If dessert was as simple as just adding sugar to flour and eggs and baking it, there wouldn’t be entire schools dedicated to it. No, if you want to make a truly impressive dessert, you have to respect the balance of flavors, textures, sights, and aromas.
The Dessert Base
If you’re making a baked dessert, you’ll almost always start with a simple base. As its name implies, the point of the base is to create a canvas for the rest of your dessert. A base can be as simple as a sponge cake or much more complex. The key thing to remember is that you never want the base to overpower the rest of the desert. It’s just there to serve as a foundation.
In the recipes above, our muffins serve as the base. And to make them both delicious and nutritious, we add fresh vegetables directly into the batter. You won’t even know they’re there but they make the muffins oh-so scrumptious and healthy.
The Dessert Filling
What kind of base a dessert uses depends largely on the filling. Whether it’s a fruit, a custard, or a jam, the filling is the primary flavor that needs to come through when you bite into the dessert. A generic base can make a great dessert, but a generic filling will almost always result in a boring dessert.
In both of our muffin recipes, the filling is fresh strawberries.
The Dessert Sauce
While a filling is the dominant flavor of a dessert, a sauce introduces a third flavor to round out the profile. It can be similar to the filling or it can contrast with the filling slightly. For instance, a chocolate ganache chocolate syrup is great for chocolate lovers, but you might want to offset the flavor with a vanilla-flavored syrup.
The Texture and Visual Elements
Desserts, and most foods, are consumed first through the eyes, then through the nose, and last through the mouth. Making a great first impression is half the battle when it comes to desserts.
Garnishing a dessert doesn’t have to be complicated—something as simple as sprinkles can elevate a cake from lifeless to ebullient in only a few seconds of work. But, like everything else, there needs to be a balance.
For example, in our strawberry muffins the strawberries and fresh veggies make up almost 30% of our batter. So to balance out those high-flavor components we add in oats and flax to introduce a little bite and heartiness.
And lastly, you want to think about textures. A spongy cake with a creamy filling may taste great but it quickly becomes cloying and unpleasant. You want to introduce texture elements into any dessert in the form of nuts, crackers, a crispy crust, etc.
Think of a crème brûlée; one of the key elements that make the dessert such a beloved classic is how the glassy, sugary crunch of the crust contrasts with the creaminess of the custard.
